November 18, 2008: Thick cut Pork Chops with Ginger and Onions

1 1/2 pound of center cut pork chops bone in
ginger, thinly sliced
onion, thinly sliced
rub mixture of olive oil, dutch spices, Worcestershire sauce and oregano

Place the onion at the bottom of the slow cooker, followed by the ginger
Then place the pork chops with the rub mixture
Cover and cook for 2 hours

Serve with boiled yam and cranberry sauce jelly

Lab Test: Shrimp Curry

This recipe came from Chitoy.

1 can of coconut milk
1 onion
Curry powder to taste
2 Hard boiled eggs, sliced (cooked separately)
Boiled potatoes (suggestion: cooked separately)
1 - 1 1/2 lb. Shrimp

Combine the milk, onion and curry powder and potatoes on the slow cooker on High.
Add shrimp and until cooked.

Serve with hard boiled eggs on the side.

November 6, 2008: Pork Chops for Wynny + Chitoy

4 Center Cut Pork Chops, thinly sliced
Oregano
Olive oil
Worcestershire sauce
Dutch spices
Onion, thinly sliced
Optional to add: Hot and sweet sopressata, finely chopped

Rub the olive oil and worcestershire sauce on the pork chops and sprinkle with oregano and spices.
Cook on High for 2 hours on the slow cooker.

Carrot and Potato Transition Team

1 pound carrot
1 pound potato cut in half
1 cup ham bouillon

Boil till soft and transfer to a dish. Mix with roasted garlic, salt, pepper and rosemary.

Cabinet Forming Mechado

2 pounds rib eye steak
1 can of stewed tomatoes
1 large onion, finely sliced
olive oil
Dutch spices
Sweet and hot sopressata chopped

1. Rub the olive oil and dutch spices on the steak.
2. Combine the stewed tomatoes, onion and sopressata
3. Cook on High on a large 4.5 qt slow cooker for 4 to 4-1/2 hours

Note: My sister and brother in law loved this mechado. On the side I also gave them the Carrot and Potato Transition Team

Bi-Partisan Adobo

1 pound center cut pork chops
1 lemon
1 medium size onion, finely sliced
Worcestershire sauce
Dutch meat spice
Olive oil

Coat the pork chops with olive oil, Worcestershire sauce and Dutch meat spice.
Place in slow cooker. Top with onions and drizzle with lemon juice.
Cook for 1 1/2 hours.
Serve with horseradish on the side.

Beef Roast with Fresh Vegetables

2 pounds eye round
2 medium onions
1 pack of grape tomatoes
2 pounds creamer potatoes
Dash of Worcestershire sauce
Olive oil

salt, pepper, thyme

1. Wrap the eye round with olive oil, Worcestershire sauce, salt, pepper, thyme mixture. Allow to sit.
2. Chop the onions and slice the grape tomatoes and creamer potatoes.
3. Place the eye round in the center of the slow cooker and place the vegetables around the eye round.
4. In a large slow cooker (4.5 qt), cook on High for 8 hours.
