Beef Roast with Fresh Vegetables

2 pounds eye round
2 medium onions
1 pack of grape tomatoes
2 pounds creamer potatoes
Dash of Worcestershire sauce
Olive oil

salt, pepper, thyme

1. Wrap the eye round with olive oil, Worcestershire sauce, salt, pepper, thyme mixture. Allow to sit.
2. Chop the onions and slice the grape tomatoes and creamer potatoes.
3. Place the eye round in the center of the slow cooker and place the vegetables around the eye round.
4. In a large slow cooker (4.5 qt), cook on High for 8 hours.

Warm Potato Salad With Goat Cheese

You can use Yukon golds, fingerlings or red bliss potatoes for this warm, creamy salad. The goat cheese melts into the dressing when you toss it with the hot potatoes.

For the dressing:

1 tablespoon white wine vinegar or sherry vinegar

1 tablespoon freshly squeezed lemon juice

Salt to taste

1 teaspoon Dijon mustard

1 small or medium garlic clove, minced or pureed

1/3 cup extra virgin olive oil, or for a low-fat dressing use 1/4 cup low-fat yogurt or buttermilk and 2 tablespoons extra virgin olive oil

For the salad:

1 1/2 pounds Yukon gold, fingerling or red bliss potatoes

Salt and freshly ground pepper to taste

2 to 4 tablespoons finely chopped red onion (to taste), rinsed with cold water and drained

2 tablespoons chopped flat-leaf parsley

2 ounces soft goat cheese

2 to 3 sage leaves, cut in thin slivers (optional)

1. Make the dressing. Whisk together the lemon juice, vinegar, mustard, salt, pepper, and garlic. Whisk in the olive oil or the yogurt and olive oil. Taste and adjust seasonings, Set aside.

2. Scrub the potatoes and cut into 3/4-inch dice if large. If using fingerlings cut in 3/4 inch slices. Steam above 1 inch of boiling water until tender but not mushy, about 10 to 12 minutes. Remove from the heat and toss while hot in a bowl with salt and pepper to taste, the onions, parsley, goat cheese, and the dressing. Sprinkle the sage over the top and serve.

Yield: Serves 6

Advance preparation: You can make the dressing several hours before making the salad.

Modified SInigang na Shrimp

1 lb of shrimp
1 large onion
2 bullion cubes with shrimp flavor
2 lemons
bok choy
ginger

1. Heat one cup of water for the bullion cubes. Pour in the slow cooker. Keep Cooker on High
2. Chop the onions and ginger and squeeze the lemons in the slow cooker.
3. Cook for 30 minutes.
4. Drop the bok choy. Cook for 10 - 15 minutes.
5. Drop the shrimps. Cook for 10 -1 5 minutes or until done.

Serve with oyster sauce.

What to Do With Stale Bread? Pudding, for Starters

In Mediterranean societies, a meal without bread is nearly inconceivable. Bread is a staple in my kitchen, too, but like many households we often don’t finish a loaf before it becomes hard and stale. That presents an opportunity, not a problem: Mediterranean cooks long ago figured out just how much you can do with stale bread. People who have survived on little never throw out food that can be eaten.

As long as it’s not moldy, bread that has dried out can be reconstituted in thick vegetable soups, pungent salads and comforting, savory bread puddings. I’m particularly fond of stale bread used with tomatoes — now is a perfect time to take advantage of the last few weeks of this summer’s bounty.

Choose breads that are made at least partially with whole wheat flour or other whole grains. They’ll be higher in fiber and such nutrients as selenium, potassium and magnesium. Be aware that cutting hard bread is a bit dangerous; the knife can slip off the hard surface, and a serrated bread knife makes a nasty cut. If your stale bread is too hard to cut easily, douse it with water first. You can even plunge it into a bowl of water for about 20 to 30 seconds, then lift it out and squeeze gently.

Savory Bread Pudding With Tomatoes and Herbs

Stale baguettes and country breads give me a welcome excuse to make savory Italian bread puddings, called stratas. Add different vegetables in season, such as sautéed mushrooms or greens.

1/2 pound stale bread, sliced about 1/2 inch thick (see note below)

1 large garlic clove, cut in half, green shoots removed

2 ounces Gruyère cheese, grated (1/2 cup)

1 ounce Parmesan cheese, grated (1/4 cup)

1 pound firm, ripe tomatoes, sliced

Salt and freshly ground pepper

2 teaspoons fresh thyme leaves

2 teaspoons chopped fresh rosemary

4 large eggs

1/2 teaspoon salt

2 cups low-fat milk

Note: If your bread is too hard to slice, dip it in the milk for about half a minute, then cut it.

1. Preheat the oven to 350 degrees. Oil or butter a two-quart baking dish or gratin. If the bread is soft, toast it lightly and rub all the slices, front and back, with the cut clove of garlic. (If it’s hard and stale, just rub with garlic.) Mince what garlic remains. Combine the two cheeses in a small bowl.

2. Layer half of the bread slices in the baking dish. Top with half of the tomato slices. Sprinkle the tomato slices with salt and pepper, then with half the thyme and rosemary and half the remaining garlic. Top with half the cheese. Repeat the layers.

3. Beat together the eggs and milk. Add 1/2 teaspoon salt and a few twists of the pepper mill, then pour over the bread and tomato layers. Place in the oven, and bake 40 to 50 minutes until puffed and browned. Remove from the oven, and serve hot or warm.

Yield: Serves four to six

Advance preparation: This can be assembled through step 2 a few hours before beating together the eggs and milk and completing the casserole.

Variation: Add 1 pound Swiss chard or beet greens, prepared as they are for Sautéed Beet Greens With Garlic and Olive Oil. Layer the cooked greens over the bread with the tomatoes.

September 9, 2008: Tilapia in Lemon Butter Sauce

1 lb tilapia fillets
1 fresh lemon
2T butter
Dill

Spread the butter on the slow cooker. Drizzle the tilapia fillets with lemon and dill.
Cook on High for 45 minutes.

This is so simple and so fresh to cook, I'd like to try variations using capers or ginger.

September 7, 2008: Shrimp with Ginger-Lemon Reduction

1 lb shrimp, fresh not frozen
Freshly grated ginger
Lemons
2T Olive oil

Peel shrimp and set aside. Place olive oil in slow cooker and add lemon and ginger. Set cooker on High for 15 minutes. Then place shrimp and cook on High for 1 hour

Serve with steamed white rice with roasted garlic flakes.

Note: When you are in a rush, you can saute the shrimp rather than use the slow cooker.

Test Lab: Slow Cooker Roasted Garlic Recipe

Ingredients

* 3 large bulbs of garlic
* 3 TBSP. olive oil


Directions

1. in a 1 quart slow cooker pour in 1 TBSP. olive oil
2. cut the tops off of 3 bulbs of garlic
3. place the garlic in slow cooker right side up on top of the oil
4. drizzle 2 TBSP. olive oil over the tops of the garlic
5. cover and cook on Low for 4 hours or until the garlic is soft and tender.
6. cool and wrap tightly in plastic wrap and refrigerate
