Back in Time: Health and Happiness


As I approach a milestone in my life, I realize there are really 2 key things I am grateful for: Health and Happiness. The picture above shows a representation of Health and Happiness. My Organic 7-Bean and Barley Soup and my Toys. The recipe for the soup is below. And no, you can't have my toys. Don't even think about it.

Organic 7-Bean and Barley Soup


I came across the Bean Soup Mix in the Bulk Foods Section of Whole Foods. It is so good to have this specially when your life is "on the go" most times. I modified the recipe to suit what I have in the kitchen and the time because, well, I have no time!

Ingredients
1 cup dried multibean and pearl barley mix
4 cups water
1 (14-ounce) can whole tomatoes, with juice
3 cloves garlic, smashed
2 medium carrots, chopped
1/2 medium onion, chopped
1 bay leaf
1 1/2 tablespoons salt, oregano, thyme and provence herbs for seasoning
Freshly ground black pepper
1/2 ounce dried porcini mushrooms, optional
1 T olive oil

Directions
Let beans soften by soaking overnight.
Put beans, water, tomatoes and their juices, garlic, carrots, onion, barley, bay leaf, 1 1/2 tablespoons salt, etc., and porcini mushrooms (if using) in a slow cooker; cover and cook on HIGH until the beans are quite tender and the soup is thick, about 4 hours.
Stir in the spinach, cheese, and vinegar, cover, and let the soup cook until the spinach wilts, about 5 minutes. Taste and season with salt and black pepper, to taste.
Ladle the soup into warmed bowls and drizzle with parmesan cheese.

What's Keeping Deanna Out of the Kitchen?

Slow Cook Lamb Shoulder in BBQ sauce

Lamb shoulder
BBQ sauce
Za'atar
Thyme
Marjoram
Everyday seasoning
Red onion, finely chopped

1. Mix all ingredients in a bowl, except the lamb shoulder and red onion (duh!)
2. Rub the mixtures on the lamb shoulder. Allow to sit. Peacefully.
3. Place olive oil in the slow cooker.
4. Add the lamb shoulder.
5. Sprinkle the red onion on the lamb shoulder.
6. Cook until well done.

This is SUPER DELICIOUS!

Beef with Bok Choy and GInger

I stumbled upon this recipe by simply using the ingredients I have on hand. I am certain this is a variation of some popular recipe I may not be even aware of as I cook based on what I recall long ago.

Beef
3 heads of bok choy, cut thinly, stems removed
Onion
Ginger, cut finely
Oregano
Basil
Thyme
Olive oil
Garlic
Worcestershire sauce

1. Rub the beef with Worcestershire sauce and spices. Allow to sit.
2. Place olive oil on the slow cooker, followed by the bock choy, garlic, ginger, onion. Coat the bok choy with olive oil.
3. Place the beef and cover with the bok choy.
4. For 1 pound, cook on High for 3 hours.

Soon it will be Pomegranate Time!


Soon it will be the season for pomegranates and we do not like to miss out on this nutritious fruit (http://www.healthdiaries.com/eatthis/11-health-benefits-of-pomegranate-juice.html). We missed out last year sine I had issues reconciling my super white kitchen with what looked like blood spattered on my walls since we did not know how to seed a pomegranate. Until now. Thanks to www.realsimple.com

1) Score and cut the fruit in sections.
2) Submerge the fruit in water and pull out the seeds in water.
3) The seeds will seek and the white membrane will float to the surface.
4) Dry the seeds in paper towel. Store for 3 days.

Stir fresh lemon juice and chopped dill into cooked quinoa.
